Then, in April 2023, during a trip to Charlotte, NC, the spark was ignited. As my husband and I prepared for a half marathon, we stumbled upon a documentary, “Game Changers,” revealing the powerhouse potential of a vegan lifestyle among elite athletes. With newfound determination, we embarked on the vegan journey, bidding farewell to dairy and meat alike.

Immersing myself in the intricacies of veganism became my mission over the next five months. Armed with an Instant Pot gifted by my husband on my birthday, I honed my skills, crafting a repertoire of staple recipes and perfecting the art of weekly meal prep.

December 2023 unveiled a startling revelation: my lifelong struggle with lactose intolerance, unbeknownst to me until my mother nonchalantly disclosed my infancy reliance on soy formula. It dawned on me—I had unwittingly been primed for veganism all along.

Eager to share the transformative power of this lifestyle, I extended my knowledge to my family. Witnessing their remarkable transformations—weight loss, reduced medication, and heightened vitality—fueled my conviction.

For my husband, the vegan diet brought his cholesterol levels to a harmonious equilibrium, accompanied by a surge in energy. As for me, the metamorphosis was profound. Bid farewell to the days of discomfort and welcome a newfound vigor, both in my running endeavors and daily life.

Yes, the occasional gluten contamination still poses a challenge, but the overall elevation in well-being is undeniable. With each stride, I embody a testament to the boundless energy and vitality that veganism has bestowed upon me.
